Jamie Celaya appointed Chef de Cuisine at Square One restaurant

After being honored in the top 20 of The Daily Meal’s “101 Best Hotel Restaurants around the World”, Square One restaurant is taking another step to bring Square One to another level with the appointment of Jamie Celaya as its latest Chef de Cuisine.


Illinois-born Chef Jamie earned a degree in Culinary Arts from the Cooking and Hospitality Institute of Chicago, an affiliate of the renowned Le Cordon Bleu.


A year after his graduation, he secured a position at NoMi restaurant at Park Hyatt Chicago, working closely with the Executive Chef to deliver some of the finest and most eclectic French cuisine.


Four years in this celebrated kitchen not only equipped him with the necessary skills and wisdom to move on to the next step of his career, but also strengthened his bond with Hyatt Hotels Corporation.


Chef Jamie then moved to the tropical landscape of Hyatt Regency Coconut Point Resort & Spa in the United States, ensuring high-quality cuisine and operations at the Tarpon Bay and Tanglewood restaurants. It was here that he had the chance to acquire further knowledge of seafood and international cuisine, which led to his appointment as Chef de Cuisine at Hyatt Regency Guam’s La Mirenda restaurant.


Featuring sumptuous weekend brunches and buffets, La Mirenda’s resemblance to Square One restaurant makes Chef Jamie a natural choice as the next Chef de Cuisine at Saigon’s most prestigious dining venue.


In his new role at Park Hyatt Saigon at No.2 Lam Son Square, District 1, he will work closely with Executive Chef Marco Torre and the team at Square One, keeping up the high standards of this signature restaurant.


“I’m ready to start the next chapter of my career and contribute all I have in order to bring Square One to the next level,” says Chef Jamie, who will become an official member of Park Hyatt Saigon in January 2015.


In his spare time, Chef Jamie loves to travel and explore various cuisines and cultures around the world, especially that of Europe and Asia.
