Chinese people always kept secret of their occupation; so Mr. Pham Bang’s family had to study how to make this dumpling and what kind of flour they used. It took them a few years to discover the real way of making it. Moreover, his floating dumpling is even more delicious than that made by Chinese. Despite getting out of hardship, Mr. Pham Bang still keeps up this sideline which helps him support the family for 25 years, establish his art career. And most importantly, he wants to show his deep gratitude to this simple dish.

The way of making the Chinese floating dumpling is similar to that of Vietnamese o­ne. However, the specialty is the process of preparing ginger mixture. White refined sugar is replaced with sugar candy, which has the original taste of sugar cane, reddish brown color and is boiled in ginger mixture. People can serve this dish with ground peanuts. A bowl of real Chinese floating dumpling includes two balls as big as two eggs of small fowl. The stuffing includes green bean mixed with sugar and ground black sesame.
