Farmers work on Sa Huynh sea salt farm in Quang Ngai Province.

The farm in Pho Thanh Commune, Duc Pho District, some 60 kilometers from the province’s Quang Ngai City only generates salt from the third to fifth months of the lunar calendar.

Salt production has been passed down from generation to generation in many local families over the past 200 years. Salt farmers say they just listen to winds to learn whether salt grains would be small or big.

According to farmers in Sa Huynh, they will have to measure the salinity of seawater before pouring it into the sea salt field. In other to ensure the standard level of salinity, farmers let water evaporate under temperatures of 30-35 degrees Celsius.

To make salt as clean as possible, farmers must master production skills. After being harvested from the field, salt is dried for four days before it is packed for sale.

In case it rains, farmers will lose everything and must restart from scratch.
